New Mexico State University Chile Pepper Institute


To learn about the hottest crop around, stop by the university’s unique Chile Pepper Institute. They sell seeds, condiments, cookbooks, and many other things chile pepper. You can also check out the institute’s gardens, with more than 150 varieties. Both self-guided (free) and guided (fee, reservations required) tours are available, and the best time to visit is between July and September.

By the time you leave, you’ll know your greens and jalapeños from your reds and cayennes—very useful when ordering at New Mexico restaurants. While on campus, stop by the Fabian Garcia Botanical Gardens or the University Museum, where exhibits pull from a vast collection of Native American, Hispanic, and colonial artifacts.
